Vinification
The maceration process lasts over 13-15 days with daily punching down at controlled temperature of 20-25° C until the exhaustion of the sugars on the marc. The product ages then for 12 months in oak barrels of about 7000 liters.
Organoleptic properties
Ruby-red color – almost garnet; it has a rich smell with typical, slightly grassy smell. The flavor is dry, soft, full, harmonious, and perfectly tannic.
Serving suggestions
It is a wine to reflect upon either drunk alone or with company. It is delicious with roasted meat, strong-flavored dishes, and spicy and aged cheese.
